El primer taller del ciclo Diners nos invita a pensar juntos sobre el uso del suelo agrícola y los efectos sobre la tierra por parte de los humanos.
Trataremos de entender brevemente cómo ha evolucionado la agricultura desde la Media Luna Fértil hasta llegar al uso de semillas genéticamente modificadas. La demanda de consumo de alimentos actual implica que muchos cultivos están monopolizados, lo que conlleva un uso excesivo de pesticidas.
Veremos de cerca el efecto que este tipo de agricultura ha tenido sobre el maíz. Un cereal con una diversidad increíblemente rica que ha sido uno de los cultivos que más ha sufrido a partir de estas transformaciones genéticas. Sin embargo, podemos encontrar en este grano aprendizajes que propongan otras formas de cultivar y comer juntos.
Propondremos un proceso ancestral de preparación del maíz, la nixtamalización, que mejora la absorción de sus nutrientes y desarrolla unas propiedades organolépticas únicas en el cereal. Finalmente experimentaremos con la aplicación de esta técnica a otros productos.
Sobre el ciclo COMENSALES 2023
Throughout the cycle we will review where the food we eat comes from, how and what we grow, under what conditions we do it and what implications it has for the planet. We will also think about how we cook, with whom we cook and with whom we share a dish, and how such a common gesture can help us rethink our way of building the world. We will get to know and analyse some culinary techniques, from the most purely traditional to some more avant-garde ones, and we will let ourselves be seduced by the aromas and flavours obtained. Together we will consider ways of obtaining food in a sustainable way and we will learn how to cook, take advantage of, share and celebrate the abundance of some crops.
